Ingredients

  • 4 lbs 8.0 oz Pale Malt (2 Row) Bel (3.2 SRM)
  • 4 lbs 8.0 oz Wheat, Flaked (1.6 SRM)
  • 1 oz Goldings, East Kent Hops[5.00%] (60 min)
  • 0.75 oz Coriander Seed (Boil 5.0 min)
  • 0.75 oz Orange Peel, Bitter (Boil 5.0 min)
  • 1 Pkgs Belgian Wit Ale (White Labs #WLP400)

Instructions

Use a single infusion mash in a Gott-type cooler at 154 F. Mash for 45 minutes or until conversion is complete. After mashing and a slow lauter (the flaked wheat can result in a thick mash), add the EK Goldings hops and boil for a full hour. Perpare the coriander by cracking the whole kernals open with a grain crusher. The orange peel must bee the bitter type (curaco orange) and NOT the common sweet orange. For the last 5 minutes of the boil, add the cracked coriander and orange peel. Cool rapidly and ferment normally.

It is not unusual for a Wit to be cloudy when finished - as a result of the unmalted wheat. However the taste is excellent! This beer is one of my house favorites - I try very hard to keep it in stock, though it is very popular with all of the guests.
