  • The term Head or Foam refers to the bubbly layer of foam at the top of a freshly poured beer. Foam is formed by rising carbon dioxide bubbles in the beer that combine with substances on the surface of the beer to produce tiny bubbles. Head Retention or the long term stability of the foam is an important objective for many beer styles.
