Kraeusen is the thick foamy head that forms at the top of the beer during the early stages of fermentation. Some brewers remove the kraeusen by a blow-off tube, siphoning or skimming as it often contains yeast, tannins and proteins leftover from the boiling process. However, most modern commercial brewers do not remove the kraeusen.
